The Espresso

There are three simple, yet fundamental elements that determine the success of a good coffee: the blend, the machine, and human skill. These three components merge their qualities into a single act to create a coffee of perfect balance.

The blend is essential, because the composition and quality of the beans largely determine the outcome of a perfect espresso: no coffee, considered as a single variety, can achieve the right harmony of taste, aroma, and body without human intervention.

For this reason, tradition and experience, innovation and intuition have enabled Altamura Caffè to create blends that satisfy every taste.

Robust, sweet, classic, fruity, or spicy — the choice is wide, and the quality is always at the highest level. The machine, like a fine musical instrument, must always be perfectly tuned, through regular maintenance and constant checks.

Each time it is used, the right amount of water must pass through the pressed coffee powder — at a constant temperature of 88–90°C, for about 30 seconds, and under a pressure of 9 atmospheres.

All this ensures that the ideal amount of coffee in the cup (about 30 ml, with a weight of approximately 7 g) has an impeccable taste. And finally, there is the human element — the skill of a good barista who knows how to serve an exceptional espresso, perfectly balanced and full-bodied, conveying that subtle pleasure that only a truly great coffee can offer.
